 I think I made it pretty clear when I shared our Easter recipe that I’m no food blogger. As if you weren’t sure, let me tell you about yesterday…

I totally forgot the post was due. Completely forgot. So I ran to the store because I had to grab a few things anyway, left the store, delivered some things to a friend then REALIZED I DIDN’T EVEN GET THE INGREDIENTS I NEEDED.


So I went BACK to the store, e-mailed sweet Krista apologizing, only to remember when I got home, I did in fact take pictures of these a few weeks ago for this purpose! {Insert the face palm emoji.} I knew I’d forget! Haha!!

Anyway, thank you so so much for your kind words on my last post about our precious Cray. Your community means so much to me and I’m thankful for this place to share and journal our lives and God’s faithfulness in our journey.

SO! Today, I’m pumped to share these EASY pumpkin muffins with you.

I jokingly call them Whitney’s pumpkin muffins because my friend, Whitney, is who introduced me to them and y’all, they couldn’t be more simple!

THREE ingredients: Cake mix, a can of pumpkin and a bag of chocolate chips

That is IT.

Mix it all together (dry cake mix). Literally. All of it.

Then bake them in muffin pans (small or large!) for about 20-25 minutes and voila!

Now, if you’re like me and you secretly don’t love pumpkin then these are for you! You can’t taste the pumpkin at all! I promise! Unless you use a really big can and then put too much in there…

These are such a hit with my kids and ANYTIME I take them to tailgates or parties!
